Dish The Pie With Monique & Linda Nightingale

Please welcome my guest Linda Nightingale to Dish The Pie. Today Linda and I are talking SouthernPecan Pie and her Romantic Suspense, Gambler's Choice. But before I ask Linda about her fab book, I need to know...

Do you like desserts, Linda? What is your favourite and would you share the recipe with us?

Linda: I’m not much of a dessert person, but I love ice cream. Since I can’t make my own ice cream, I’ll share the recipe for something my mom used to make…Southern Pecan Pie.

Monique: Oh yum! I love pecan anything. Bring it on!

Southern Pecan Pie

Recipe


Mix 1 cup sugar with 1 tablespoon flour

Add 3 unbeaten eggs, 1 cup white Karo syrup, 1 teaspoon vanilla, ¼ pound margarine or butter – Mix well (do not heat)

Place pecans in pie crust and pour mixture over pecans

Bake at 375 degrees for 15 minutes, reduce heat to 325 degrees for 45-60 minutes (do not overcook)

Linda: And that’s how my mom made the most extraordinary pecan pies!

Monique: I'm totally making this pie, Linda! Have you ever eaten pie for breakfast? If so, what was it?

Linda: A guilty pleasure—yes—pecan pie (as in the recipe!)

Monique: Yummy! What’s your favourite food?

Linda: Lobster, hands down, no contest—but I love a good, medium rare steak prepared Pittsburgh style (charred on the outside, very rare on the inside).  I’ll also take snow crab, king crab or lamb chops with mint sauce.  Hum, I must be hungry as of this writing.

Monique: I think we can all agree that Lobster is pretty delish. How important is humour to you?

Linda: Very. That’s high on my list of priorities in finding the man of my dreams.    I had a British gentlemen once as a boyfriend and he constantly made me laugh. Such fun!

Monique: How often do you laugh, Linda?

Linda: A lot—most of the time at myself. I’m very clumsy.

Monique: Awww...maybe you’re one of my heroines . When was the last time you laughed?

Linda: This morning, but as to a fit of hilarity, my friend and I went to Galveston for my birthday. We started laughing and couldn’t stop, each feeding the other another line off the cuff until our sides hurt.

Monique: Happy belated birthday! When was the last time you cried?

Linda: I read a post on Facebook about how one missed her father. I miss mine to this day, and he died in 2006. I cried then.

Monique: I sympathise. I still shed a tear when I think of my loved ones who have gone home to be with the Lord. Would you tell us a bit about your book, Linda?

“I simply can’t ride an ugly horse. That would be like dating an ugly man.” Tossing her long blonde hair over her shoulder, she laughed and winked at her friend.

Meg shot her a frown, her tone accusing Becca of being an uncivilized colonist. “Rebecca McQuaid, you say the damnedest things.”

An appreciative chuckle turned her around to squint into the sun. A tall, elegant, dark figure of a man on a magnificent horse caught her imagination mid-stride. She couldn’t see the rider’s face, but she knew he’d overheard the exchange with her friend. He saluted her with a tap of his whip to the brim of his hat as he rode past. Excitement capered over her, and she smiled. The horse’s muscled, blood bay rump glistened. The stallion was sixteen-two hands, fit and impeccably groomed.

“Nice buns. That one’s good-looking enough for me.” She elbowed her friend. “Who is it?”

Meg shaded her eyes. “Gambler’s Choice and Austen Heath. Both horse and rider satisfy your criteria, my dear girl.”

“The horse is handsome.” She wished she had gotten a better look at the bay, but he was a mahogany blaze in the morning sun. “Are you telling me the rider is?”

“That’s the general consensus, but Austen hides in that rambling, dark mansion of his.” Meg studied the pair picking up a trot along the arena. “Fierce competitors. Hard to beat at Intermediate. We’ll see how they handle Advanced.”

 “An Advanced horse?” Becca wriggled her shoulders. “I’m in the market.”

“Look elsewhere.” Meg’s finger jutted at Becca’s nose. 

“Austen won’t sell Gambler for love or money. Guaranteed. 
Not even for the kind of money you’re willing to spend.”

“Meggie.” She linked arms with her friend. “Everything has a price.”

Meg balked like a donkey. “You’re in a different world, princess.”

“Well, not everything. Love doesn’t have a price.” Pain wrenched her heart as a memory of the breakup with Daniel flashed through her mind. The hurt was too fresh to even think of another man. “But I’m not in the market for love.”

Becca had found that the best way to protect her heart was to play spoiled little rich girl. She had that part down pat, and, as Winston Churchill had said, There is something about the outside of a horse that is good for the inside of a man. She was looking for a horse to fall in love with and help mend her broken heart.

Born in South Carolina, Linda has lived in England, Canada, Miami, Ft. Lauderdale, Atlanta and Houston.  She’s seen a lot of this country from the windshield of a truck pulling a horse trailer, having bred, trained and showed Andalusian horses for many years.

Linda has won several writing awards, including the Georgia Romance Writers Magnolia Award.   She is the mother of two wonderful sons, a retired legal assistant, member of the Houston Symphony League, and enjoys events with her car club.  Among her favorite things are her snazzy black convertible and her parlor grand piano.  She loves to dress up and host formal dinner parties.

We're starting this week with another treat for you. Today Marissa Garner is joining me to dish the pie on her new FBI romantic suspense series, and she'll also be sharing her recipe for Hot Fudge Pie. Marissa, a warm welcome to Dish The Pie. I think you know my first question is always going to be about the pie, right? So, tell me, Marissa...

Do you like desserts? What is your favourite and would you share the recipe with us?

Marissa: Love, love, looove desserts. Just about anything chocolate gets a high ranking, but this Hot Fudge Pie is definitely #1. I hope you enjoy it.

Monique: You had me at fudge, hunny! Let's not keep the readers waiting.

HOT FUDGE PIE RECIPE
Ingredients:

1 can sweetened condensed milk (not evaporated milk)
¾ cup water
3 egg YOLKS
12 oz bag of semi-sweet chocolate chips
1 tsp vanilla
Dash of salt
Baked, deep-dish piecrust

Instructions:

In a heavy, medium-sized saucepan, whisk sweetened condensed milk, water, and egg yolks together until thoroughly blended. Then heat over medium heat, stirring continuously. When hot, add chocolate chips, vanilla, and salt. Continue to cook until mixture thickens and turns glossy. Pour into already baked piecrust. Top with meringue and brown lightly OR let cool and top with whipped cream before serving. Enjoy!


Monique: Oh, we will! Have you ever eaten pie for breakfast, Marissa? If so, what was it?

Marissa: That’s rather personal, don’t you think? Any question starting with “Have you ever…” can raise some rather serious issues. But since pie for breakfast isn’t too serious, I’ll dish just for you, Monique. The day after July 4th, the pie is apple. After Thanksgiving, pumpkin pie is yummy in the morning. And the day after I made the Hot Fudge Pie for this picture, guess what I enjoyed for breakfast.

Monique: Haha... "Have you ever" can also be the beginning of a really cool game. I see you have a strategy...a pie for every occasion...I like it! Are you married? How did you meet your husband?

Marissa: Yes, I’m very happily married. We met at college, taking a class in one of those theatre-style classrooms. He says he noticed my legs first. Hmmm.

Monique: Aww...yeah, it's never our brain, is it?? What do you love most about him?

Marissa: He’s my rock and the wind beneath my wings. Yes, I believe a person can be both.  

Monique: You lucky girl! What is your idea of an ideal vacation?

Marissa: I love going to new places and doing new things. It can be as simple as visiting a national park or as extravagant as a Mediterranean cruise. My husband shares this philosophy, so we’ve taken many diverse trips. We’ve travelled from Athens to Anchorage to Acapulco. Not all in one vacation, mind you. I’ve enjoyed the thrill of hiking on a live volcano and a receding glacier. Recently, we explored Yellowstone National Park for the first time, and it was amazing.

Monique: Wow! I'm kinda tethered to the home front at the moment, but I love to armchair travel. Bet you have some amazing memories! Share one fact about yourself that might be surprising.

Marissa: I learned to belly dance. My husband enjoyed it more than I did.

Monique: Next stop...pole dancing...

The man in the gray hoodie was watching her. Amber Jollett couldn’t see his face, but he was the right height and build. Even from the opposite street corner, the intensity of his stare bored into her. She shivered despite the sunny morning.

Amber grimaced and closed her eyes. It was starting all over again. Two years had passed since she’d broken up with her obsessed boyfriend, but he continued to stalk her. Restraining orders and calls to law enforcement had proved useless. Now she alone was responsible for her safety. She’d lived in Coronado, across the bay from San Diego, for only two months. But two or three months was the amount of time it normally took for Jeremy to find her. From now on, she would have to be on constant alert. We're back with another Dish The Pie guest. Please help me welcome Historical author Elizabeth Bailey. She's here today to dish the pie on Silence of a Stranger, her Romantic Suspense novella, and to share a recipe with us. Yummy Sticky Marmalade and Banana Bake is Elizabeth's very own creation. 

So, tell me, Elizabeth...

Do you like desserts? What is your favourite and would you share the recipe with us?

Elizabeth: I love desserts but I’m horribly deprived these days as I’m off sugar. But I did treat myself to my favourite Christmas Pudding on Christmas Day. No recipe for that as I buy the most nutty one I can find and shove it in the microwave! Once hot it is covered in boiling brandy and set alight. Then grab your serving, cover in brandy butter and cream and stuff your face.

But I will share a very easy unnamed recipe of my invention which has a similar effect of yummy stickiness.

Yummy Sticky Marmalade and Banana Bake

Ingredients

Any packet of old biscuits too soft to eat (for UK biscuits read cookies in the US)
Alcohol of choice (sherry or port is good)
Marmalade
Bananas
Cream if you wish

Method

Bash up the biscuits into chunky crumbs and lay them in bottom of oven dish.

Splash in as much alcohol as you like, spreading it about.

Add a layer of thickly sliced banana.

Spoon marmalade over the top.

Bake in the oven for about 15-20 mins.

Serve hot, with or without cream.

Monique: Have you ever eaten pie for breakfast? If so, what was it?

Elizabeth: I have eaten a pork pie in the morning, a mini one, but can’t remember if that was breakfast or not. I love pork pies, a traditional British pie so I don’t know if you have them in the States, and I like them hot so pop them in the microwave. Never buy cheap pork pies! Just not the same. Always worth spending an extra few pence to get the better flavour.

Monique: Pork pie wasn’t the sort of pie I had in mind, but since you’re off sugar I’ll let you get away with it. What sort of things do you find funny, Elizabeth?

Elizabeth: I’m a sucker for wacky humour that is also clever like Monty Python, and I love witty stuff like Noel Coward. Friends is right up my funny bone. The gags that get me on Facebook are those which take something well known and give it a silly twist. The antics of cats are funny, and dogs just have to trot along the road to make me laugh. I laugh a lot. Life is often funny.

Monique: You're a girl after my heart, Elizabeth. I love to laugh and do a lot of it, although I have to admit that even after living in the UK for over 30 years, I still don’t get British humour... When was the last time you cried?

Elizabeth:  When I was writing a scene in my current novel the other day. And don’t get me started on sad moments in movies! I once started crying at the last half hour of The Champ and I hadn’t even seen the film. Funnily enough, I don’t cry about life much if it’s my story. Far more likely to cry in sympathy with others.

Monique: I adore authors who can make me laugh and cry. Those are the books I treasure. Which season (Spring, Summer, Autumn, Winter) is your favourite, Elizabeth, and why?

Elizabeth: I love Autumn (or Fall) because of the colours. I wait for the leaves to turn gold and red and am always disappointed if the winds blow them away before I get a chance to admire them. Also it’s never that cold in our Autumn in the UK, so the horrible weather hasn’t set in yet. Of course it rains, but then it always does over here!

Monique: My mum loves Autumn also. I’m not a fan. I do hope we have more of a Summer this year. I’m so over the stormy weather. Describe your view of bliss?

Elizabeth:  A slow hot bath with lots of bubbles, followed by a comfortable bed and a really good book. I’m not that hard to please really. I usually do the bed and book on a daily basis, but the hot bath tends to be in the mornings and it isn’t nearly as blissful that way round. Oh, and add hot chocolate and I’d be in heaven.

Monique: Oh...utter bliss.

Bea crossed over to the desk and glanced furtively at the papers. They looked like letters. One with a signature lay on top: Rad.

‘Haven’t you taken off those wet things yet?’ said his voice from the doorway.

Bea jumped, looking round.

‘You told me to wait.’

He threw her a large towel and she caught it, hardly aware that she did so as she heard his next curt command.

‘Strip off.’

‘What?’

‘You heard.’

His manner unsettled Bea. In the kitchen, he had seemed to champion her against the others to some degree. Alone with her, he had grown harsh, as grim a captor as Lyle was proving to be.

As she stood there, uncertain, she saw him begin to undress himself, ripping off his jumper to expose the bare tanned flesh of his chest.

‘Get on with it,’ he snapped, without looking round, and she quickly turned away as he began to peel off his jeans.

With caution, Bea took off her jacket and slid the damp sneakers off her feet. She sat on the bed to remove her socks.

‘Get off there, idiot! You’ll make the duvet damp.’

She leapt up again.

‘You don’t have to shout.’

Rad wrapped a towel about his waist and slipped his underwear down beneath it. His eyebrow lifted as she stared.

‘Did you think I was going to stay in wet clothes just to spare you embarrassment?’

‘You could have gone into another room.’

‘And leave you to palm anything you want to hide?’

It took a full minute for the significance of this to penetrate. Appalled, Bea gazed at him.

‘You’re not going to stand there and watch me undress.’

‘Yes.’

A cold monosyllable, as he dug into the chest of drawers. He glanced at her over his shoulder.

‘I’m supposed to search you, remember? Now strip off as I told you, and be quick about it.’

Bea trembled, half in anger, half in fear. What had she got herself into? Defiant, she glared at him.

‘What if I refuse?’

He threw a sweatshirt onto the bed and paused.

‘I can easily hand over the job to Tate or Lyle if you prefer. I can assure you their search would be far more thorough—and far more intimate.’






I grew up in Africa on a diet of unconventional parents, theatre and Georgette Heyer. Eventually I went into acting and trod the boards in England until the writing bug got me, when I changed to teaching and directing while penning historical romances and edgy women’s fiction. My 8 year apprenticeship ended with publication by Mills & Boon, and 18 historicals. Latterly I had two historical mysteries published by Berkley and I’m hoping to release more Lady Fan novels. Meanwhile, it’s wonderful to be able to return to my first love and put out new and old releases in ebook.
